3/12 Boeuf Bourguignon 4/19 Coq au Vin 5/14 Steak frites au beurre de moutarde We will make one classic French dish in each of these three classes: Boeuf Bourguignon, a beef stew that is slow-simmered with Burgundy wine from the Bourgogne region of France; Coq au vin, a chicken dish that we will cook like the Alsatians using Riesling wine; and Steak frites au beurre de moutarde, or steak and fries with a mustard sauce, a dish that is found in brasseries throughout France. At the end of class, we will sample our dishes together talking about possible wine pairings and finishing our meal with a taste of cheese from the appropriate French region and fruit.
